I have revised Po’ Girl’s Chocolate Chip Cookies for the third and probably not last time. I am still striving for something a little healthier than the original Toll House Recipe but lighter and tastier than my previous recipe posted 5 1/2 years ago. I cannot believe it has been that long! This newest revision still has half the sugar of the Toll House but a little more fat than last time. Using much less flour makes a more tender, light cookie, even with most of it being whole wheat flour.
Place on parchment covered baking sheet by heaping teaspoons and bake at 350° for 7-8 minutes for soft baked, a little longer for darker crispier cookies if you prefer.
Our apartment shuts off the heat completely after May so it was down in the low 40’s out here this morning. I wanted to heat my apartment up a little so I decided it would be a great time to bake and store some in the freezer for later. Hot weather prevents me from using the oven all summer.
My one and only vice at this time. As a borderline diabetic, I’m ashamed of myself as any alcoholic would feel falling off the wagon every time I over indulge and know I do it with some risk. I have always loved sweets, but mostly just chocolate and ice creams with some kind of fudge or chocolate in it or on it. For years I kept my cravings under acceptable control. A piece of chocolate here and there. A small bowl (or two) of ice cream after dinner in the evening. Now it’s over the moon due to once I start eating sweets, it’s hard for me to stop. I started drinking coffee with International Delight French Vanilla which is so delicious on its own and it sets my palate for more sweets like maybe a donut or scone instead of oatmeal, toast or an egg.
Since I’m new in my small town, about two months now, I have already visited a couple local bakeries in the morning if I wake up and feel the need to get out because it’s just too quiet and they have a no noise thing before 8:00 am. I’m po’ so a buck or two for something sweet is better than forking out four or five dollars for an omlette.

Sorry that I have been so lazy about posting anything of substance for a while now. The very reason for this blog was to share things I have learned living on the cheap all of my life.
Christmas was great this year, had some family and friends over for Christmas Eve this year and went to one of my son’s homes on Christmas Day for “Dinner with the Cratchits” complete with plum pudding from England and some kind of “Hot Gin Punch a la Cratchit” which I blame for the enormous group hug before I left for the night. I didn’t try any but brought some with me to try when I got home. I never drink and drive.
I lost one of my cousins a few days before Christmas this year. I am posting a picture with her from Christmas of 1957.
Some of my family now live in the Upper Peninsula. My cousin Thelma passed this year after suffering for many years with Alzheimer’s and my sister Gail passed right after Christmas last year from esophageal cancer. Christmas 1957 was the last Christmas for my Aunt Ruth who passed approximately six months later from Colon Cancer. Moral: Enjoy every Christmas like it’s your last.
I saw this idea at a diner in Marshall Mi before the holidays. They had placed a loved ones picture in one of the wreaths to honor them and so I placed a picture of my sister to honor her because she always loved Christmas so much and this was our first Christmas without her.
Wanted to add more to the usual lights and garland I place in my flower boxes each year so I found these gift boxes at the dollar store and inserted some wire to attach them. The soil was not yet frozen, so this was possible. The following is a little walk through of what I did to achieve this:
Finally broke down and made a Santa doll with the pattern I purchased many years ago. Also used some of my odds & ends to make some “baby” crafts.
I will not post actual pictures of the parties out of respect for others privacy. A few shots of some of the cookies that I and others made this year. One of my sons went all out this year and for the first time made cookies. All kinds of them. I think the Ninja sugar cookies got him started, but we really loved the melt in your mouth eggnog cookies! I have to say I have eaten so many of these I have actually felt very sick so that’s it for me.
Quick and delicious these cookies are hard to resist and just too easy to make!
Mix all ingredients together dry to wet. Completely incorporate all and drop in teaspoon size balls, flatten and bake at 350 for approximately 8-10 minutes. Use any flavor instant pudding of your choice. You don’t really need the chips at all. Makes a very tender and delicious cookie.
Place the onion, carrots, turnip, potato and squash in the pot of water that covers the vegetables at least a couple inches and bring to a boil, turning down to a simmer for approximately 30 minutes. Add the remaining ingredients bringing back to a boil. Turn heat to the lowest setting to simmer an additional 30 minutes or until the pasta gets soft which should only take an additional 15 minutes. Don’t be afraid to experiment with the ingredients and seasoning to your taste but this soup was delicious! The amount of the vegan bouillon or soup base depends on the amount of water you use and soup you end up with. This soup did not need any thickening due to some of the vegetables breaking down and the small amount of tomato paste.
