Homemade whole wheat tortillas: 1/2 C flour, 2 C whole wheat flour, 1/4 C shortning, 1/2 tsp salt, 3/4 C super hot water.
Knead til very smooth and let rest at least an hour before deviding to 8 pieces and rolling very thin to fry on hot skillet/griddle.
Saute peppers and onion and add cooked chicken with fajita or taco seasoning of your choice.
Wrap in the tortilla with any fresh veges of your choice. I like tomatoes, lettuce, vadilia onion, avocado, etc.
Keep it simple, but real.
